1 3/4 cups all-purpose flour, plus more for dusting pan

3/4 teaspoon baking soda

1 teaspoon ground cinnamon

1 cup sugar

1/2 cup canola oil, plus more for greasing pan

1 cup finely shredded zucchini

1 1/2 cups semisweet chocolate chips
Steps to Make It

Gather the ingredients.

Shred zucchini using a coarse grater until you have approximately 1 cup.

Preheat oven to 350 degrees F. Grease and flour a 9 x 5-inch loaf pan or coat with non-stick cooking spray.

In a medium bowl, stir together flour, baking soda, baking powder, cinnamon, and salt.

In bowl of a stand mixer, whisk eggs and sugar until smooth.

Whisk in oil and vanilla until blended.

Mixing by hand, stir in flour mixture until just incorporated.

Stir in zucchini and chocolate chips until evenly distributed.

Pour batter into prepared pan and bake until top is lightly browned, about 1 hour 10 minutes.

The bread is done when a toothpick inserted in center comes out clean. Cool bread in pan on a wire rack for 15 minutes.

Invert and remove from pan and allow to cool completely before slicing.
